what in the world are "floury potatoes"?? (already on the list)

Hi Tricia,
Here's a breif explaination of floury potatoes, as opposed to waxy potatoes, hope it helps explain the differences:
Floury potatoes are so named because of their low moisture and sugar content. They are high in starch. Floury potatoes are best used for baking, roasting, mashing and deep-frying. Due to their low sugar content they tend to fall apart when boiled.
Waxy potatoes are high in moisture and sugar and low in starch, and consequently tend to hold their shape and remain firm when boiled.
